Instructions
Put 100 g of lean meat (veal breast, chicken breast, lean beef) in approximately 400 g cold water with a carrot, a celery stalk and a tomato.
Let boil for about an hour.
Strain the broth (should be about 150 g) and let it cool; If the surface is fat, remove it.
