Tortilla sacromonte
Instructions
With 600 g flour, 1 cup of water and 1 tablespoon oil, prepare a paste from which you derive 8 thin pizzas.
Stir-fry 400 g of mixed lamb entrails (heart, lungs, kidneys, liver and spleen) cut into small pieces, with a little oil, salt and pepper, with 300 g of diced potatoes and 300 g of tomatoes into pieces.
Distribute this stuffing on 4 tortillas, moisten the edges and cover them with the remaining 4 tortillas.
Bake in the oven already warm to 120 degrees for 20 minutes, until the dough is cooked and crisp.
