Chocolate truffles
Instructions
In a saucepan melt the chopped chocolate in a Bain-Marie.
In a bowl beat the egg yolk with 2 tablespoons sugar until foamy cream, then add the sifted cocoa.
Heat the cream with the remaining sugar, combine butter, melt, stirring.
Off the heat add the egg yolk and melted chocolate.
Cool the mixture then make many small truffles, wrapping them in cocoa powder.
Ingredients and dosing for 6 persons
- 50 G = = Cream
- 25 g of butter
- 3 tablespoons of sugar
- 1 egg yolk
- 100 G = = Chocolate
- Cocoa powder
