Stracciatella chicken broth
Instructions
Clean and wash the egg by removing the neck and the tip of the wings, and cut it into touch.
Put in a saucepan capable water with chicken and vegetables cut coarsely.
Cover and cook for a couple of hours.
Meanwhile, beat the eggs in a bowl with the grated cheese, lemon juice and a pinch of salt.
Pour the mixture into the boiling broth already filtered, stirring quickly with the whip, and let it boil for a few minutes at moderate flame.
Pour into soup tureen and bring to the table.
The boiled chicken is served as a main dish.
Ingredients and dosing for 4 persons
- For the broth:
- 1 1000 g hen
- 2 ripe tomatoes
- 1 onion
- 2 ribs of celery
- 200 cl of water
- Salt
- For the dough:
- 4 whole eggs
- 1 lemon (juice)
- 4 tablespoons of grated parmesan cheese
- 1 pinch of salt
