Clean the lettuce, cut the leaves into strips and boil 10 minutes in the broth.
Beat the eggs, add the Parmesan cheese, salt and pour the mixture into the soup, stirring with a fork to ' rip ' eggs which congeal.
You have four bowls at the bottom of the bread, pour over the stracciatella and serve.
The accompanying wine: Colli Tortonesi Cortese DOC, Bianco Di Custoza DOC, DOC Colli Lanuvi.
