Skewers of marinated mutton
Instructions
Cut the meat into cubes.
Let them marinate for an hour in a bowl with a few tablespoons of olive oil, a clove of garlic, a sprig of thyme, peppercorns and salt.
Drain the meat.
Split the cubes on four metal skewers and cook over very much alive for 3 minutes turning continually.
These skewers a bit strong flavour must be almost crisp on the outside but soft inside.
Accompanying wines: Boca DOC, Torgiano Rosso DOC, Lizzano Malvasia Nera Superiore DOC.

- 500 g of mutton leg
- 1 clove of garlic
- 1 sprig of thyme
- A few tablespoons of olive oil
- Salt
- Peppercorns
