Mashed broad beans
Instructions
Put the dried beans, wash them in a crock pot with potatoes, peeled and coarsely chopped.
Cover with water and simmer, covered pot for 20 minutes without stirring.
Drain the water, cover the beans again with cold water and add salt.
Slowly bring to a boil and cook for 30 minutes.
Pass the beans to Mashers, put them back on the heat and beat vigorously with a spoon to incorporate the oil a little at a time.
The mash is typically accompanied with vegetables: trimmed, Catalonia, lampascioni.

- 2 large potatoes
- 250 g of apulian olive oil
- Salt
