Peel the potatoes, slice them and immerse them in cold water for 1 hour.
Drain and dry them very well and dip in the flour.
To heat the oil and pour in the potato when it is hot.
Have lively simmer without frying.
Remove from heat when they are soft and golden.
Season with salt and bring to the table.
