Instructions

Heat oil to 170 degrees.

Peel the potatoes and cut them into sticks of 7-8 cm long and 6-7 mm of side.

Rinse them thoroughly with cold water to remove excess starch.

Drain and dry with a cloth or absorbent paper.

Fill the Fryer with basket two thirds of potatoes.

Immerse it slowly into the hot oil, let it cook for seven to eight minutes, occasionally shaking the basket to prevent the potatoes from sticking.

As soon as the potatoes are slightly browned but not yet cooked inside, drain and arrange on a plate lined with paper towels.

Let the oil reaches 170 degrees again and continue to fry in the same way the remaining potatoes, sgocciolandole as on absorbent paper.

Heat the oil at 170 degrees and put all the chips in the basket.

Let it finish cooking (it will take about 10 minutes).

When the fries are well browned, drain and place them on paper towels, then place them in the pot, add salt and serve immediately.
