Spinach pappardelle
Instructions
Clean, wash and boil the spinach in a little salted water.
Drain well and dry them in a pot to low heat mixing them often until all the water has evaporated completely.
On the table prepare the flour, add salt, eggs and spinach.
Knead the ingredients with your hands until mixture is smooth and compact.
Make a ball, then another with a towel and let them stand for about 30 minutes in a cool place.
Then pull the dough with the rolling pin.
Roll it up and cut it with a knife, forming approximately 1 centimeter pappardelle.
