Fried eggplant
Instructions
Wash, trim and cut into cubes the eggplants.
Put them in a colander sprinkled with salt and leave them to lose water.
Rinse and dry them.
Brown whole garlic into the oil then add the Eggplant and FRY.
Add the tomatoes and cook over medium heat for 20 minutes.

- 600 g of eggplant
- 300 g of peeled tomatoes
- Olive oil
- Garlic
- Salt
