Roast Pork Loin (Lonza di Maiale Arrosto)
Instructions
Salt over the surface of the pork loin and arrange sprigs of Rosemary lengthwise tying them with kitchen Twine.
Lay the piece of pork loin in a baking dish and drizzle with oil.
Sprinkle with Rosemary, salt and put in the oven at 200 degrees below the grill.
Keep the meat under the grill for 2 minutes needed to seal it, then bake for 25 minutes.
Serve hot or cold sliced.

- Little of olive oil extra virgin
- 4 sprigs of rosemary
- Unrefined sea salt
