Irish stew
Instructions
Pre-cut rather large 900 g of mutton (or sheep) and place the meat in a saucepan with 5 large sliced onions and 700 g of potatoes into wedges.
Season with salt, pepper, a handful of chopped parsley and 1 teaspoon dried thyme.
Cover with water and bring to a boil to flame.
Cover, lower the heat to low and let simmer for 2 hours, adding more hot water if necessary.
