Frozen blackberries
Instructions
Clean and wash the blackberries (leaving a dozen aside), then mash in a bowl, cover with lemon juice and let them marinate for an hour.
Put the sugar in the water and let dissolve so cold for about half an hour.
You heat the milk with the vanilla pod and turn off before it can boil.
Mix the egg yolks with sugar and slowly pour in the milk (without the vanilla), beating vigorously, then add the whipped cream.
Pass through a sieve the blackberries, and add these washings to the sugar syrup, stir and add all the milk and cream.
Pour into a bowl and put in the freezer.
After three hours or so take it and frullatelo to obtain a smooth and homogeneous cream, add the blackberries you've held by made into pieces and serve.
With this procedure you can get every type of fruit ice cream, what is important is the basic syrup made with water and sugar should melt always cold.
