Instructions

Rinse the shrimp and throw them for a few seconds in boiling water.

Drain and sgusciarli.

Prepare a batter with 2 eggs and 1 egg yolk, add little by little the flour until mixture is slightly thick, add salt and mix the egg white mounted to snow.

Mix the shrimp batter.

Heat the oil in a cast iron pan and when the oil will be steaming pour the mixture in spoonfuls.

Brown the pancakes on both sides and serve very hot.
