Chocolate cream
Instructions
Melt the margarine with 50 g of sugar over low heat and add the starch and chocolate.
Simmer (low heat) for 5 minutes, stirring well and dilute with cold milk, without ceasing to stir.
Add the yoghurt and cook for 3 minutes.
Turn off the heat and wait for it to cool.
Pour the cream into a bowl and put in the fridge.
Beat the egg yolks with sugar and brandy and put the mixture in boiling water bath shut with a whisk until the volume of the mixture will be tripled.
Remove from heat and allow to cool.
Pour on the cream and serve immediately.

- 300 g of milk
- 200 g of chocolate yoghurt
- 50 G = = Margarine
- 120 g of sugar
- 35 g of chocolate
- 2 egg yolks
- 35 g of corn starch
- 1 tablespoon of brandy
