Instructions
Put 8 hours soak red beans.
The next day, in a pressure cooker, softened the beans with a fork until punzecchiandoli crush.
Should not be fully cooked because they will end up cooking alongside rice.
Separately, in a large pot, sauté the condiments made with oil, onion, peppers, chopped pork lard and 1 nut.
Add the rice and FRY without water.
Add the beans, you cooked previously, a cup and a half of water.
The water must be the one used to cook the beans to give color to congrìs.
Pour everything into the pot and let Cook over low heat without stirring until the rice softens.
