Clean the artichokes, leaving a few inches of stem and dip them in boiling salted water and acidulated with lemon juice for 4-5 minutes.
Drain, Pat dry and chill.
While artichokes stem side crush them on a shelf to widen the leaves.
In a pan pour oil to edges high enough to cover the artichokes, let it heat up and cook artichokes until golden and crisp will.
Drain well and serve hot.
