Instructions
Boil the chestnuts, peeled them in salt water to which you've added a teaspoon of sugar and a vanilla pod.
Pass the chestnuts, adding butter and remaining sugar.
Pour a small glass of rum, egg yolks, then continuing to work with the wooden spoon.
Achieved a good amalgam, slowly incorporate the egg whites already mounted to snow quite firm.
Pour into a buttered pan and sprinkle with breadcrumbs.
Fill up to three-fourths of the height.
Broil in the oven for about 30-35 minutes.
Serve hot.

- 700 g of peeled chestnuts
- 100 g of sugar
- 1 pod vanilla
- Butter
- 1 glass of rum
- 4 eggs
- Little of breadcrumbs
