Instructions

00948 CORN BLINIS and SOUR SAUCE INGREDIENTS for 4 PEOPLE for the pasta: 380 g yellow flour for polenta, quick cooking, 20 g flour, 6 spring onions, 1 teaspoon bicarbonate satin, 2 eggs, a dl milk, 50 g butter, salt.

For the sauce: 3 tablespoons of honey, 4 tablespoons of tomato sauce, a tablespoon and 1/2 balsamic vinegar, 1/2 tbsp olive oil, a pinch of cumin powder, 2 spring onions, salt and pepper.

Prepare the sauce.

In a bowl pour honey, tomato coulis, balsamic vinegar, olive oil and cumin.

Emulsified vigorously with a whisk by hand.

Clean the spring onions, chop finely and add to the sauce.

Add salt and pepper, mix well and place in the refrigerator until serving.

Mix in a bowl the cornmeal with the white, baking, beaten eggs, milk, finely chopped spring onion and a pinch of salt.

Knead until you have a smooth batter and smooth enough, cover it and let it rest for about 30 minutes.

Grease with butter a pan of about 8 cm in diameter, pour in a tbsp of batter and cook the frittellina on both sides until it is wrinkled.

Prepared in the same manner as other rings while compound.

Serve the blinis with sweet and sour sauce prepared separately.
