Instructions

VELVETY 04936 BASIL PEAS INGREDIENTS for 4 PEOPLE 1 kg of fresh small peas in pods, a l vegetable broth, a sprig of basil, chopped onion, 2 tablespoons chopped parsley, 30 g butter, 10 cl of fresh cream, salt, pepper.

Shelled peas and keep aside the pods.

Arrange the pods in a large bowl filled with cold water for about 2 hours.

Then drain them and cook them in vegetable broth for about 25 minutes on moderate heat.

Remove from heat, add salt and pepper, add the basil leaves previously washed and blend for a few minutes.

In a pan Sauté chopped onion in butter, add the parsley and simmer for 10 minutes to fire.

Add peas and cover with water; cover and cook for 20 minutes: must be very tender.

Add the cream, Basil puree prepared previously and stir carefully.

Let simmer for 2/3 minutes more to moderate heat, then serve immediately.
