Instructions

04804 SOUP with BEAN SPROUTS INGREDIENTS for 4 PEOPLE 300 g 200 g of broccoli, bean sprouts, 300 g of tomatoes, 100 g of tofu, a clove of garlic, 2 sprigs of parsley, 2 tablespoons of olive oil, a sprinkling of white pepper, a pinch of salt.

Eliminate wasted parts to broccoli and wash them in plenty of water, drain.

Wash well the bean sprouts, drain and dry well, patting with several sheets of paper towel from the kitchen.

In a saucepan, bring to a boil 1 capable, 5 l of salt water, plunge the broccoli and cook for 15 minutes.

Cut the tofu into slices, grigliatelo for 3 minutes on each side on a very hot grill, then cut it into cubes.

Remove the stalk and tomatoes, wash time 30 seconds in boiling water.

With a slotted spoon, drain and peel with a knife.

Cut them in half, remove the seeds inside and divide them into cubes.

Peel the garlic, finely and tritatelo in a pan with oil, FRY for a few seconds.

Add the bean sprouts and tomatoes, Cook over medium heat 2 minutes, stirring with a wooden spoon.

Cut the broccoli into mashed together with the cooking water with an immersion blender.

Divide the soup in individual dishes and complete with diced tofu, bean sprouts and tomato.

Add salt and pepper.

Finish with parsley, washed, dried and finely chopped.
