Meanwhile, squeeze the oranges.
Separate the egg whites from the yolks.
In a bowl beat the egg yolks with sugar; without ceasing to stir, stir the orange juice and potato starch.
Preparing filtered through a strainer, directly over another bowl.
With an electric mixer, whip the egg whites with a pinch of salt and blend gently to previously prepared.
Spread the cream over the chocolate mousse and let it sit in the fridge again.
