Pheasant with leeks and apple

09224 PHEASANT with LEEK and Apple SAUCE INGREDIENTS 4 PEOPLE 1 pheasant divided into four parts, 4 leeks, 1 carrot, 1 onion, 3 apples, 200 ml of white wine 200 ml whipping cream, 50 ml of sparkling wine, butter, salt and pepper.
The PROCEEDINGS Take the carrot, chopped leeks and onion, sauté in a little oil, add an Apple cut into pieces, season with salt and pepper.
Add the pheasant and doratelo.
Pour the white wine and Cook, over low heat, for 30 minutes.
Add the cream and champagne, keep cooking until the pheasants is tender.
Slice apples thin and rosolatele slices in butter.
Serve as a garnish of Pheasant.
