Aromatic eggplant

05209 AROMATIC AUBERGINES INGREDIENTS for 4 PEOPLE 3 large eggplant, garlic, parsley, basil, olive oil, salt and pepper.
Wash, clean and dry the eggplant.
Cut into slices not too thin, place them in layers, with the salt, to a colander and let them lose water for an hour.
Then dry them well and brush liberally with oil.
Place one layer on a large platter, Sprinkle chopped Basil and parsley and freshly ground pepper.
Put on top of garlic straws, make a second layer and proceed in the same way until exhaustion of Eggplant.
Eventually pour over a little olive oil, let marinate for an hour.
Heat one or two good grills and lay over the Eggplant first cuocendole high heat, so that remains imprinted on the classic pulp grids, then lowering a bit the flame so that it does not run the risk of burning.
Keep those hot ready while grilling the other.
Serve with the oil and the aromas of the marinade.
