Instructions

04210 BLACK CABBAGE SOUP INGREDIENTS for 4 PEOPLE 2 ribs of celery, 1 carrot, 1/2 onion, 1 clove of garlic, 1 bunch of basil, 1 sprig of Sage, 1 pinch of thyme, 1 glass of oil, 6 black cabbage leaves cut into strips, 1 cup of beans already boiled, 1 tablespoon of tomato sauce, salt, freshly ground pepper, 50 g of grated Parmesan.

Chop the celery, carrot, onion, garlic and fry them in oil; just begin to turn Golden, add the chopped basil, Sage and thyme, then the cabbage leaves and black beans.

Pour the tomato paste dissolved in warm water, add salt, cover with about 2 gallons of warm water and cook.

When the cabbage is cooked, after about an hour, pour into a soup tureen, sprinkle with plenty of pepper and grated Parmesan cheese, stir and serve hot.
