Instructions
INGREDIENTS 4 PEOPLE 1 onion, 2 carrots, 2 celery ribs, 2 leeks, 2 tomatoes 2 litres and perini, through water, bone marrow, 1 550 g beef ribs white, 1 sprig of parsley, 2 Bay leaves, 1 clove of garlic, salt, peppercorns, Juniper.
Time: about 2 hours and 20 minutes time: easy PROCEDURE Wash all vegetables and cut them into pieces.
Pour the water into a large saucepan and soak up the bone and the meat; then add the vegetables, whole parsley, Bay leaves and garlic.
Add a handful of salt, pepper and a few grains of Juniper.
Bring to a boil, skimming repeatedly with a slotted spoon to remove the impurities that are on the surface.
Then lower the heat, cover the Pan and simmer for about 2 hours, skimming.
When cooked, strain the broth through a colander by way of rent, to cookware from the cooking pot; use it then for the preparation.
