04232 PAST POTATOES and HERBS INGREDIENTS for 4 PEOPLE 500 g potatoes, 1, 5 l water, a nut for vegetable broth, a bouquet garni, a pinch of nutmeg, a teaspoon of soy-based cream, 1 tablespoon chopped chives, 1 tablespoon of chopped parsley, one tablespoon of chopped basil, salt and pepper.
Peel the potatoes and cut them into pieces.
Pour the water into a saucepan with the nut and the potatoes, add the bouquet garni, salt and pepper.
Cover and bring to a boil; simmer for 15 minutes, soft focus.
Remove the bouquet garni, and stir the potatoes, add the nutmeg and ground salt and pepper, if necessary.
When serving, add the soy cream to make the past more velvety.
Serve in bowls or plates and garnish with chopped herbs.
