Instructions

04177 LETTUCE PAST INGREDIENTS for 4 PEOPLE 4 tufts of butterhead lettuce, water, salt, 1 sprig of parsley, 30 g butter, 1 glass of cream, peppercorns.

Clean the lettuce while eliminating the first most wasted outer leaves and washing repeatedly.

Bring to a boil in a pot of boiling salted water, then soak the lettuce (whole) and parsley.

Let boil for 3 minutes, then drain the vegetables with a skimmer, eliminating the parsley (save the cooking water, which you will need later).

Arrange the lettuce heads, which will be significantly reduced in volume, on the work surface and cut into strips.

Melt the butter in a saucepan over low heat; together with lettuce strips seasoning and let it braise in sweet fire, for 2/3 minutes.

Squirt then with a litre and a half of vegetable cooking water and simmer gently for 20 minutes.

After this time, transferred everything in a blender and blend for a few seconds.

Then pour the cream in the saucepan used previously and diluitela with cream.

Cook for a few more seconds to slightly thicken the past, then flavored with a good ground pepper, add salt and serve immediately.

If you want, you can accompany with bread croutons fried in butter or roasted in the oven.
