Spaghetti with ratatouille with bean sprouts

03972 SPAGHETTI with SOY SPROUTS RATATOUILLE with INGREDIENTS for 4 PEOPLE 1 onion, 1 red pepper, 1 green pepper, 1 eggplant, Zucchini, 2 2 tomatoes, 2 cloves of garlic, 2 tablespoons of tomato sauce, 3 tablespoons of olive oil, 2 tablespoons basil, 150 g of mozzarella, 2 tablespoons pine nuts, 175 g of soy beans, salt, pepper, paprika, bread crumbs.
Cut the onion and julienned peppers, tomatoes, Eggplant and zucchini slices.
Sprinkle the Eggplant with salt and then is over a sheet of absorbent paper.
Cook the onions and peppers in olive oil for 5 minutes; Add garlic, Zucchini, Eggplant and soy beans, Cook for 10 minutes, stirring occasionally.
Add the tomato paste, tomato slices, salt and herbs.
Cook the crumbs; put the beans in a pot, cover with mozzarella and pine nuts, place in the oven and finish with a sprinkle of fresh basil.
Serve with the bread crumbs.
