Instructions
Beat the egg yolks with sugar, add the mascarpone cream and work well.
Beat the egg whites until fluffy with a pinch of salt, stir the mixture carefully.
Pass the biscuits in coffee and place in a soup tureen in layers, alternating between cookies and mascarpone cream.
Finish with a sprinkle of cocoa powder and serve cold.

- 500 g of mascarpone
- 150 g of type pavesini biscuit
- 4 eggs
- 4 tablespoons of sugar
- Coffee
- Cocoa powder
- 1 pinch of salt
