Chestnut truffles (3)
Instructions
Put in pot with brown sugar and 100 cl of water, bring to a boil and simmer until the chestnuts are softened.
Allow to cool in the syrup.
Melt the chocolate in a Bain-Marie.
Puréeing the Browns, incorporate the chocolate and mix well.
With the mixture form small balls.
Mix the hazelnut grains and roll truffles.
Place in refrigerator for at least 1 hour before serving.
Ingredients and dosing for 4 persons
- 250 g of peeled chestnuts (brown) and skinned
- 70 g of sugar
- 50 G = = Chocolate
- Hazelnuts
- Chopped chocolate
