Cheese Puffs (Sgonfiotti al Formaggio)
Instructions
Unroll the dough on a floured work surface and roll out the dough.
Appiattitela lightly with a rolling pin after sprinkled with a little flour.
Mix in a bowl the ricotta and Parmesan with a pinch of salt.
Cut 40 discs of dough about 5 cm.
Spread half a tablespoon of cheese in the middle of 20 disks and cover them with others.
Press well around the filling with your fingers and, if necessary, draw the edges always using the cookie cutters.
Align the disks of dough in a baking pan that you covered with baking paper.
Brush the surface with olive oil, then add salt slightly.
Put the dough in the oven discs you already heated to 200 degrees for about 15 minutes.
Or until the puffs are become a beautiful golden color.

- 1 roll of fresh pizza dough
