Tomatillo-chipotle sauce
Instructions
If you're using the classic stone mortar, grind the salt and garlic first before adding the other ingredients so that their flavor to permeate the other ingredients.
If you are using a mixer, you can add in this order, but this is extremely important for flapping as fast as you can when you are mixing so that the ingredients form a lumpy mixture.
Garnish with the cilantro.
Ingredients and dosing for 4 persons
- 1 teaspoon of salt
- 2 cloves of peeled garlic
- 6 chipotles chilies
- 1 1/2 cup of peeled and boiled tomatillos in water
- 1/2 white onion cooked with tomatillos
- 10 sprigs of cilantro
- 1/3 chopped white onion
- 1/2 cup of water
- 3/4 cup of chopped fresh coriander
