Chocolate Mousse (Mousse di Cioccolato)
Instructions
Beat the yolks with milk.
Melt the chocolate in a Bain-Marie pan, when it is all melted, let it cool (not too much otherwise you're back to solidify!) and add to the milk and yolks, stirring until the chocolate cream smooth and without lumps (lumps may form if the chocolate is too hot).
Whip the egg whites (4) with sugar and cream (in two separate bowls or one after the other, washing the pot after the first) and add them to the mixture of chocolate, stirring from the bottom up, not to remove them.
Put in refrigerator at least 1 hour before serving.

- 400 g of chocolate
- 2 whole eggs
- 2 egg whites
- 100 g of milk
- 1 tablespoon of sugar
- 25 cl of sweet cream
