All vegetables are good for this soup.
They don't miss a leek and a pinch of spinach.
When everything is cooked, pass through a sieve or food mill in, put in another saucepan with a piece of butter and serve with grated Parmesan.
Remember that it takes many, many vegetables for the soup must appear as a thickish cream.
