Mince 1 clove of garlic with Basil.
Beat the eggs with the cheese and add the chopped.
Cut eggplants into wedges and boil in salted water.
Drain keep but not fulfilled.
Squeeze to remove excess water and dip into the batter.
FRY in hot oil and salt them before bringing them to the table.
