To get the classic cooking Brown some beef bones and veal in oil and butter; Add the water and continue cooking for several hours until the liquid has thickened.
For a faster solution, as any used cooking roast sauce thinned with a little water or broth.
To obtain a mixture without lumps, if the roux is hot pour the cold broth; If the roux is cool, add the hot broth.
