Instructions

Heat to 150 degrees in a honey pot, sugar and 70 g of water.

Remove from the heat.

Whip the egg whites until stiff and add them to the mixture.

Replace all at moderate flame for 45 minutes, stirring.

Blanched almonds in boiling water, peel them and chop finely.

Add to the mixture along with sesame seeds, and stir vigorously to mix the ingredients to perfection.

Cover with the first sheet of ostia a rectangular or square Cake Pan, pour the mixture preparation, level it and cover with the other sheet.

Press lightly with your hands.

Let it sit for about an hour, invert the Pan onto a cutting board and cut the cake into pieces before serving.
