Instructions

3_07108 MULLET BAKED in FOIL with VEGETABLES INGREDIENTS for 4 PERSONS 8 fillets of red mullet, 400 g of julienne-cut vegetables (carrot, celery, leek), a clove of garlic, 5 tablespoons of olive oil flavoured with basil, butter, salt, pepper. Rinse the fillets under running water and tamponateli with kitchen paper. In a pan with non-stick coating you heat a tablespoon of Basil oil and fry gently for 5 minutes the julienned vegetables with chopped garlic. Cut 4 sheets of aluminum about 30 cm in length and paid within each 1 tablespoon Basil oil; place a fillet on each sheet of red mullet and cover with a few tablespoons of vegetables with garlic. Arrange over vegetables another thread, add salt and pepper and add a knob of butter. Close the aluminum foil to form a bag and cook in the oven already warm in 200° or on the barbecue. When cooked, remove the wrappers from the oven and, without opening them, let them rest for a few minutes. Open cartocci, arranged in individual plates, garnish with basil leaves and serve accompanied with croutons.
