Instructions

3_07094 with sardines and COUSCOUS with VEGETABLES INGREDIENTS for 4 PEOPLE 12 fresh sardines, 250 g of couscous, semolina 50 g of raisins, 2 red peppers, 2 onions, 2 shallots, 2 cloves of garlic, a Sicilian pesto bcchiere ready, a nut, a teaspoon of fresh pepper, a teaspoon of chili pepper, olive oil, sherry vinegar, salt, pepper.

lay the sardines already cleaned on a plate lined with parchment paper, salted and sprinkled with a drizzle of olive oil.

Cook at grill of the oven for about 15 minutes.

When cooked, remove from oven and keep warm.

Peel the garlic and cut it into thin slices.

Wash the peppers, remove the seeds and inner strands and cut the flesh into cubes.

Peel the onions and shallots and cut them into thin slices.

In a pan heat a few tablespoons of oil and FRY all vegetables prepared.

When they are well kept, add the chili and sweet and sprayed with a tbsp of vinegar.

Add salt and pepper and continue cooking another 5 minutes.

Add the sardines, season then remove from heat.

In a saucepan bring then to cook the couscous in salted water; remove from heat and allow to inflate.

Sgranatelo then with the prongs of a fork.

Cooked, season it with the pesto alla sicialiana and raisins, stirring carefully.

Serve the couscous with vegetables and sardines.
