Pea cream with salmon
Instructions
04938 PEA CREAM with SALMON INGREDIENTS for 4 PERSONS 800 g of peas 200 g, salmon steak, 3 potatoes, milk, a nut, a tablespoon of sugar, 1/2 teaspoon lemon zest, Tangerine and grapefruit zest, soy sauce, salt and pepper removed from any salmon plugs and lisps.
Place it in a souse soup plate with olive oil and soy sauce to taste.
Peel the potatoes and cut them into pieces.
Bring to a boil a liter of water, dissolve the nut and let Cook the peas and potatoes for 20 minutes or until tender.
Puree the peas and potatoes until smooth cream (keep aside some peas for the final decoration) and if necessary add a little milk.
Combine sugar, citrus zest and stir.
Add salt and pepper.
Drain the marinated salmon and cut into small pieces.
Distributed in pea cream dishes, garnish with nuts of salmon and some cock.
