04268 PUMPKIN CREAM INGREDIENTS 4 PEOPLE 1/2 kg pumpkin pulp, 1/4 kg of potatoes, 50 g butter, 2 leeks, a pack of cream, 1/4 l vegetable broth, salt, 3 tablespoons of olive oil.
PROCEDURE wash the leeks and cut them into thin slices.
Wash the potatoes, peel them and cut them into chunks.
In a saucepan heat the oil, add the leeks and saute it slices for a few minutes.
Add the potatoes and continue cooking for 10 minutes at moderate flame.
Add pumpkin pulp then apart and continue cooking for another 10 minutes to fire.
Pour the broth and cook for 20 minutes.
Remove from heat and let cool.
Using an immersion Blender, produced a smooth and homogeneous cream; Add the cream, mix thoroughly with a wooden spoon and, if necessary, add salt.
Pumpkin cream served in individual bowls, decorated with a sprig of Rosemary.
