Custard (crema pasticcera)

2_17118 CUSTARD INGREDIENTS for 6 PERSONS 30 g cornflour, 30 g flour, 250 g caster sugar, 185 ml of lemon juice, 3 teaspoons grated lemon rind, 40 g butter in small pieces, 6 egg yolks.
Put the flour, cornflour and sugar in a medium sized saucepan.
Add the juice and lemon zest and 375 ml of water and cook over medium heat, without ceasing to stir.
When the thickened cream, lower the heat and cook for about 1 minute, then incorporate the butter and the egg yolks, one at a time, stirring.
Transfer the custard to a bowl, cover with film of food and let it cool.
