Honey ice cream

of fresh milk; 10 egg yolks; 50 g sugar; 200 g of honey; 25 g Walnut kernels; 25 g toasted skinned hazelnuts; 25 g shelled pistachios; 25 g toasted pine nuts; 25 g sultanas; 3 cl.
Rum.
Soak the raisins in rum for an hour.
Coarsely chop the hazelnuts and walnuts.
In a saucepan put the egg yolks, sugar, honey and work with a whip.
Whip the mixture.
To heat the milk and add the dried fruit.
When the milk reaches a boil, pour it into the saucepan, stirring quickly with the whip.
Bring on the fire and stir gently with a wooden spatula.
Lead to 80 › C and remove from heat, allow to cool.
Assemble the ice cream machine.
When it is almost ready, stir in the pine nuts, pistachios and raisins drain.
