Instructions

10400 THIN CAKE INGREDIENTS for 4 PEOPLE 500 g wheat flour or sifted (1, 2), 25 g of fresh yeast, 800 g of Escarole, 2 cloves of garlic, 2 tablespoons salted capers, 1 tbsp raisins, 20 pitted black olives, olive oil, salt, red chili powder.

Knead the flour with the yeast dissolved, a few tablespoons of olive oil, a pinch of salt and a glass of warm water.

Knead dough as usual and when is elastic, collected a ball and let rise for at least an hour, so that it can double its volume.

In the meantime take care of Endive: wash it and let it boil to steam, then iron the paper in a pan with oil and the garlic, salt and pepper insaporendola just before removing it from the fire.

When the dough is properly leavened, roll out the dough on a work surface dividing it into two equal parts.

With a lined greased baking oil, then add the Escarole previously mixed with capers, rinsed with olives and raisins washed and left soaked in warm water.

Cover with the remaining dough and place in the oven for 30-40 minutes before serving (cold).
