Instructions

RABBIT 09539 AROMA 4 PERSONS INGREDIENTS 1 Rabbit about 1, 5 kg cut into pieces, onions, garlic cloves, sprigs of Rosemary, Sage leaves, sprigs of thyme, 1 sachet of Saffron, extra virgin olive oil, 2 dl of dry white wine, salt, pepper.

METHOD heat oil in a large skillet and Brown the rabbit pieces on both sides.

When they hired a beautiful color, remove them from the Pan and keep them warm.

Merged into the pan the aromas, the coarsely chopped onions and cloves of whole garlic and peeled.

Simmer over medium heat for a few minutes, then put the rabbit in the Pan and washed with wine.

Let it evaporate, lowering the flame to a minimum, wet with 2 dl of warm water in which you will have diluted saffron and savory.

Cover and cook for 45 minutes turning the rabbit pieces halfway through cooking.

If necessary, add more water.

In the end, adjust the salt and pepper.

You can serve it with a side of boiled, mashed potatoes or polenta.
