Barley with vegetables

05653 BARLEY with VEGETABLES INGREDIENTS for 4 PEOPLE A red onion, a small pumpkin, 2 carrots, 3 tablespoons oil, 150 grams of barley, a litre of water, a sprig of thyme, 100 g of green beans, a can of borlotti beans, 50 g of seaweed, salt.
In a pan gently fry chopped onion, pumpkin, Peel and private from the seeds, cut into slices and carrots into rings.
Let stand for about 10 minutes, stirring constantly; then add the barley, water and herbs.
Moderately salty.
Continue to cook over a gentle heat for about 40 minutes.
Add the green beans and borlotti and simmer for a few minutes.

Serve in plates accompanied with garlic bread croutons and a sprinkling of chopped parsley.
