Instructions

05574 ROLL of SPINACH and cheese INGREDIENTS for 4 PERSONS 1 pack of spinach from 500 g, 50 g butter, 4 eggs, 3 tablespoons flour, 2 tablespoons Parmesan cheese, scallion, 1 1/2 l of milk, salt, pepper, nutmeg.

For the cream cheese: 250 g of fresh cheese, 6 tablespoons of cream, 2 tablespoons of lemon juice, salt, pepper, butter.

PROCEDURE Place the spinach in a saucepan, place over heat, with 25 g of butter and let it evaporate all the liquid; remove from heat and mix them with the Parmesan cheese.

Brown the chopped onions with the butter for a few minutes; Add the flour, stir and cook for 2 or 3 minutes, pour the milk gradually, stirring constantly.

Let simmer for 10 minutes, remove from heat, add spinach and egg yolks, season with salt, pepper and finally a grated nutmeg, incorporate the egg whites.

Grease a baking sheet with aluminum foil and foderatela well buttered.

Spread the spinach cream into the mould and bake in oven for about 20 minutes average.

put on top of a cloth, roll it and let it cool.

Mix with cream cheese, sprinkling with lemon juice and insaporitelo with salt and pepper.

Carefully unroll the roll of spinach, spread over cheese mixture, roll it in tin foil and place in the refrigerator for 12 to 24 hours.

Before serving, remove the foil and cut into thick slices.
