Instructions

05205 PEPPER FLAN INGREDIENTS for 6 PEOPLE 1 Kg of sweet peppers, 150 g butter, 1 onion, 120 g flour, 4 eggs, half a litre of milk, 50 g of grated Gruyere cheese, 50 g of grated Parmesan cheese, basil, salt, pepper.

In a pan melt 50 g of butter, add the onion and the chopped basil leaves, fry gently.

When the onion is browned, pour into the pan the peppers, washed, deprived of filaments and seeds, sliced, colour, flavour with salt, pepper and cook over a low heat.

Prepare a bechamel thickish with rest of butter, flour and milk.

When will become smooth and elastic, remove from fire, dress with salt, parmesan, Gruyere, the peppers are passed to a ricer, egg yolks and mix.

Beat the egg whites until foamy and firmly gently incorporate the rest.

Grease the moulds from souffl ' and divide the mixture, then place in the oven to moderate temperature, for about an hour.

When the souffl ' have reached and surpassed the stencils and borders will have taken a beautiful golden color, remove and serve immediately.
